Basmati Rice Salad with Grilled Chicken

Ingredients:
- 1 cup cooked basmati rice
- 1 lb grilled chicken breast
- 2 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, sliced
- 2 tablespoons lemon juice
- 1 tablespoon tahini
- Salt and pepper, to taste

Instructions:
1. Grill the chicken breast and slice it into strips.
2. Mix the cooked rice with the mixed greens, cherry tomatoes, and cucumber.
3. In a small bowl, whisk together the lemon juice and tahini.
4. Pour the dressing over the rice mixture and toss to combine.
5. Top with grilled chicken and serve.
